Chicken Noodle.

Hands down, this is one of my favorite meals my amazing mother makes and I thought it was about time to share it, especially on a cold winter's day like today!

Grandma’s Homemade Chicken Noodle Soup

·       3 T. olive oil
·       4-5 cloves garlic, chopped*
·       2 onions, chopped
·       4 stalks celery, chopped
·       1 rotisserie chicken, skinned, boned, and shredded*
·       6 14.5 oz. cans of reduced sodium, fat free chicken broth
·       4 large carrots, peeled and chopped
·       1 T. thyme
·       1 package of dry egg noodles (no yolks)
·       Cayenne pepper, parsley (about a tablespoon), and curry (about a teaspoon)

In a large soup pot, heat oil. Add garlic, onion, and celery. Saute for 10 minutes. Then add chicken broth, carrots, shredded chicken, and thyme and bring to a boil. Simmer until vegetables are tender (about 20 minutes). In separate pan, cook noodles according to directions. Add noodles to broth and simmer for 10-12 minutes or until done. Add cayenne pepper, salt/pepper, parsley, and curry to taste. Serve with french bread.

*You can use the minced garlic in the jar…I just don’t know the equivalent. Reduce the number of onions to 1 or use just a 1 1/2 Tbsp of minced onion instead if you don't like things very onion-y. This recipe is so delicious and so easy! The chicken is just one that you can get at a grocery store already made and seasoned, then you just take off the skin and shred it to pieces. You don't even need to saute the vegetables if you don't have time! Your meal is ready in about 30 minutes.
